This paper looks at the benefits of using Microfluidizer® Technology for creating stable nanoemulsions. Nanoemulsions have a versatile range of applications, including manufacturing beverages.

Solubilizing oil-based ingredients in beverages is commonly done via oil-in-water emulsions. By creating a nanoemulsion, the smaller oil particles will remain in suspension and be stable over time.

When creating a nanoemulsion to be used in beverages, it is necessary to achieve not only a small particle size, but also a tight particle size distribution (which can be measured via the polydispersity index or PdI).

The Microfluidizer® Technology method can be used to create clear water beverages with the additional benefit of long-term stability.
